Why Damascus
What sets a Damascus steel knife apart isn't the pattern: it's how it cuts, and how long it keeps cutting.

Damascus steel layers hard and flexible steel: the edge holds far longer than a conventional knife and sharpens easily.
The rippled pattern comes from folding the steel. Every blade carries a unique mark, like a signature.
Octagonal, in resin and stabilised wood. A firm grip even with wet hands, and a weight that balances the blade.
A thin, properly sharpened blade separates fibres instead of tearing them. Tomato, onion, fish: everything stays intact.

The Essential Set (Gyuto + Petty) is the starting point: one big knife and one small one. The Complete Set adds the Nakiri for vegetables and is the one we recommend to almost everyone. The Master Collection includes all six knives, with the three Santoku in their three colours.

Yes. A good knife is the fastest upgrade to your cooking: you cut with less effort and more safety. The Santoku, with its rounded tip, is especially easy to master.
Wash them by hand with warm water, dry them right away and store them in their sheath. Never in the dishwasher. A couple of passes on a honing rod or stone every few weeks keeps the edge like day one.
