About Kaen
Kaen (火炎, “flame”) is Japanese Damascus steel cutlery for people who love to cook. Gyuto, Nakiri, Santoku and Petty with octagonal resin and wood handles, and three sets to start with the full kit.
Kaen means flame.
Every Damascus steel blade is born from fire: layers of steel folded, forged and sharpened until the metal reveals its pattern, different on every knife.
We chose the six pieces a home cook really uses: a chef’s knife, a vegetable knife, two all-rounders, a kiritsuke for long cuts and a small one for precision. Nothing decorative. Nothing that stays in the drawer.
Kaen is for people who cook every day and want to feel the difference from the first cut.

What sets a Damascus steel knife apart isn’t the pattern: it’s how it cuts and how long it keeps cutting.
An edge that lasts for weeks
Damascus steel combines layers of hard and flexible steel: the edge lasts much longer than a conventional knife’s and is easy to resharpen.
No two knives are alike
The wavy pattern comes from folding the steel. Every blade has a unique print, like a signature.
A handle that fits your hand
Octagonal, in resin and stabilised wood. A firm grip even with wet hands, and a weight that balances the blade.
Clean cuts, no crushing
A thin, well-sharpened blade separates the fibres instead of tearing them. Tomato, onion, fish: everything stays intact.
Why Damascus and not a regular knife?

The harder the steel, the longer the edge lasts; the lower the angle, the less effort it takes to cut. Damascus combines both.
