How to care for a Damascus steel knife

Wash by hand and dry immediately

This is the rule that changes everything. Damascus steel is stainless, not indestructible: prolonged moisture and harsh dishwasher detergents dull the pattern and can pit the edge. Warm water, a drop of soap, a soft sponge, and dry with a cloth right away. Thirty seconds.

Never in the dishwasher

Not even "just once". Heat warps the resin and wood handle, detergent salts attack the steel, and knocking against other cutlery chips the edge. It is the number one cause of rejected warranty claims across Japanese cutlery.

Cut on wood or plastic

Glass, marble or ceramic boards destroy any edge within weeks. An end-grain wooden board or a polyethylene board yields to the edge instead of crushing it. And use the right motion: push and slide, don't crush. For bones, frozen food or very hard squash, use another knife.

Store it in its sheath

Every Kaen comes with a sheath. Use it: a drawer without a sheath is an edge knocking into everything else. If you prefer a magnetic strip, rest the spine first, then the blade, never the edge.

Once a month: a pass on the honing rod
